Basic Steak Rub

Printer-Friendly version

2 tsp 16-mesh black pepper
2 tsp sweet paprika
1 1/4 tsp kosher salt
1 tsp onion powder
1 tsp garlic powder
1 tsp ground cumin

Combine ingredients and mix thoroughly. Makes enough for two one-pound NY Strip steaks (or a pound of wings); doubled recipe makes enough for a three-pound roast.

To use, brush steak lightly with oil and coat generously with rub (do not forget the edges). For better results, do this an hour before cooking the steaks, and then allow them to come up to room temperature during that hour.
