Za'atar Seasoning

1 Tbsp dried thyme
1 Tbsp cumin seeds
1 Tbsp coriander seeds
1 Tbsp sesame seeds
1 Tbsp ground sumac
1/2 Tbsp oregano
1/2 Tbsp marjoram
1/2 tsp salt

Toast sesame seeds lightly in a dry skillet over medium heat until they just begin to brown. Remove from heat and allow to cool.

Toast cumin seeds and coriander seeds in a dry skillet over medium heat until fragrant. Remove from heat, allow to cool and then grind.

Combine all ingredients and store in an airtight container. Use on bread (with olive oil), on white meats (as a rub), and on roasted vegetables.
