Camp Sausage Gravy

1/2 lb ground pork sausage OR half of a 12-oz can of Spam, diced 1/2"
cooking oil (avocado oil recommended for the high smoke point)
1 1/2 Tbsp butter
2 1/2 Tbsp (1/3 cup) flour
12 oz milk, or 6 oz evaporated milk and 6 oz water, or 12 oz water and powdered milk per package directions (pre-mixed)
salt, to taste
pepper, to taste

Use an 8" cast iron skillet (8" top diameter, 6" bottom diameter). Cook mise en place, preparing all ingredients in advance so that you can give the cook your full attention.

Wet skillet well with oil. Add sausage or Spam, place on medium heat source and brown. Then add butter and melt, mixing well. Stir in flour and cook until flour starts to brown, mixing continuously.

Add milk and mix, scraping bottom well, and cook, stirring and scraping continuously; simmer until thickened, adding salt and pepper to taste.

Serve on/with any type of toasted/grilled bread.

Serves two. To double, use 10" skillet.
