Ham and Pinto Bean Soup

1 tsp olive oil
1 large green bell pepper, diced
2 cups diced onion
1 large carrot, diced
3 stalks celery, diced
10 ounces ham, finely chopped
1 cup Homestead Basic Beans (pintos), drained, reserve sauce
1 tsp ground cumin
1/4 tsp freshly ground black pepper
1 tsp chili powder
1 1/2 tsp Old Bay seasoning
one 15 oz can fire roasted diced tomatoes
4 cups chicken stock
1 tsp beef stock concentrate

In a large stockpot, sauté the vegetables in the olive oil over medium heat until soft. Add tomatoes, broth, ham, seasonings and pinto beans, plus reserved bean sauce as necessary to add volume to the soup. Simmer, covered, for 45 minutes.
