Baked Panko Flounder

5 medium flounder fillets (or other fish of choice)
1 egg
1 Tbsp water
1/2 c all-purpose flour
1 c Panko bread crumbs
salt, to taste
pepper, to taste
olive oil
1/2 tsp dried dill

Preheat oven to 400 degrees F. Line baking sheet with parchment paper; spray or brush lightly with oil.

Spread flour on a plate; salt generously. Spread bread crumbs on a second plate; salt generously and sprinkle with dill. Beat egg together with water; sprinkle with salt and pepper and mix well.

Pat fish fillets dry; salt lightly. One by one, dredge fillets in flour, shake off excess, dredge in egg, shake off excess, roll in bread crumbs to coat, then place on baking sheet.

Bake for 15 minutes.
