Martha's Whole Wheat Pizza Crust

two 1/4 oz packets of active dry yeast
1 Tbsp honey or 1 tsp sugar
1 1/4 cups warm water (110 degrees F)
2 cups all purpose flour
1 1/2 cups whole wheat flour
1 tsp salt
1 Tbsp olive oil

Mix yeast, honey (or sugar) and water thoroughly and let sit 5 minutes. Sift together flour and salt. Add oil to yeast mixture, stir well, and add to flour. Mix thoroughly. Turn out into large greased mixing bowl, cover and let rise 45 minutes to an hour until doubled in size.

Preheat oven to 450 degrees F. Punch down dough and divide in half, let sit 4 minutes. Roll out to size, place on screen or in pan. Pre-bake for 5 minutes at 450 degrees F, remove from oven. Crust can be frozen for later use at this point.

Sauce, top, and bake at 450 degrees F for 12 to 15 minutes until done.
