Lemon Grass Tea

12 c water
4-5 stalks lemon grass (bottom 12" of plant, not blades)
1 c sugar

Cut lemon grass stalks into 3-4" long pieces. Put the pieces in a 6 quart pot and add water. Bring to a boil over medium-high heat, then reduce heat to medium and keep at a low boil until water volume is reduced by 1/3 and tea is a golden brown color. Remove from heat and allow to steep 5-10 minutes. Add 1 c sugar for very sweet tea (or less to taste) and serve hot, or chill and serve as iced tea.
