Homestead Deer Sausage
5 lb deer ham, cubed
2 Tbsp crushed red pepper
2 Tbsp salt
2 Tbsp pepper
3 Tbsp sage
2 Tbsp garlic powder
1 Tbsp fennel seed
Grind deer meat through a fine 3/16" plate. Combine with other ingredients, mix well, and age overnight in the
refrigerator. Divide into five equal portions. Work each portion into a seamless ball, then roll it out into a
cylinder and slice into patties.
