Carne Asada Marinade
4 chipotles in adobo sauce, chopped
1 Tbsp minced garlic
1/3 cup finely chopped onion
1/2 Tbsp ground cumin
1/4 cup chopped cilantro
1/2 cup pureed tomatos
1/2 cup fresh lime juice (about 1 large lime)
1 1/2 tsp kosher salt
1 tsp fresh ground black pepper
1/2 cup vegetable oil
Combine all ingredients except oil in a food processor. Liquify, then add oil slowly while blending.
Use to marinate 2 1/2 lb of skirt steak in the refrigerator overnight. Allow steak to come to room
temperature before cooking.
