Homestead Corn Cakes
Makes 7 corn cakes.
1/2 cup all-purpose flour
1/2 cup yellow corn meal
2/3 tsp salt
1 1/2 tsp baking powder
1/2 tsp garlic powder
ground dried peppers to taste
1 cup milk
2 tsp vegetable oil
1 egg
Preheat a greased griddle to 350 F or Low-Medium. Put first 6 ingredients in a bowl.
Whisk egg and oil into milk; mix until homogenous. Add milk mixture to first six
ingredients, mix well. Pour batter on griddle 1/4 cup at a time, cook until
the top looks dry (a bit longer than you cook normal pancakes),
then flip and cook other side until done.
