Homestead Southwestern Black Beans

Printer-Friendly version

1 recipe Homestead Basic Beans, undrained
1 c chopped onion, medium dice (about half of a large onion)
1/2 c chopped bell pepper, medium dice (about 2/3 of a medium pepper)
1 Tbsp tomato paste
1 Tbsp yellow mustard
1 Tbsp Mexican oregano
1 1/2 tsp chili powder
2 tsp smoked paprika
2 tsp garlic powder
2 tsp onion powder
1 Tbsp Texas Pete hot sauce
4 tsp ground cumin
2 Tbsp molasses
1/4 tsp black pepper
2 tsp chicken bullion
2 tsp beef bullion
salt to taste
1 Tbsp fresh lime juice (about 1/2 of a lime)

Cook 1 pound black beans per Homestead Basic Beans recipe. Drain beans and reserve. Put liquid in 5 quart sauce pan or 6 quart stock pot and add remaining ingredients. Bring to a boil, reduce heat and simmer, uncovered, for 10 minutes.

Add lime juice, then add beans to saucepan and mix thoroughly. Continue to heat on the same heat setting, uncovered, for 15 minutes, stirring occasionally; this should just bring the whole to a simmer at the end of the 15 minutes.

Allow to marry for at least 1 hour at room temperature; for best results, allow to marry overnight in the refrigerator once the beans cool.
