Colombian Lentils

1 c lentils
3 c water
1 medium tomato, chopped
1 medium onion, chopped
1 Tbsp + 1 tsp ground cumin
1/2 Tbsp salt
2 Tbsp vegetable oil
2 medium potatos, cubed

Combine lentils, water, tomato, onion, cumin and oil in a large saucepan and bring to a boil. Reduce heat to medium-low and simmer, covered, for 30 minutes. Add potato and a bit more water (if needed), return to a boil, reduce heat to medium-low and simmer, covered, for 15 more minutes.
