Poached Pears

10 - 12 ripe pears
10 c water
5 c sugar
1 stick cinnamon
1 Tbsp whole cloves
1 Tbsp fresh minced ginger
1/2 Tbsp cardamom
chocolate syrup

Combine water and sugar in an 8 quart stockpot, bring to a boil, add cinnamon, cloves, ginger and cardamom and reduce heat to medium and simmer until volume is reduced by a third, about an hour.

Peel and core pears; add them to the reduced syrup, adding enough pears that the syrup is just sufficient to cover them. Return to a boil, reduce heat to medium and simmer until pears are tender enough to stick a fork through without resistance, about 1 hour. Remove pears from syrup, cool, and serve topped with chocolate sauce.
