Homestead Pickled Zucchini

6 1/2 cups sliced zucchini (about 2 very big zukes)
2 cups julienne sliced onion (about 1 medium onion)
1 large head garlic, sliced thin
6 cups cold water
3 1/4 tablespoons salt
3 2/3 cups vinegar
2 cups sugar
1 1/2 teaspoon celery seed
1 1/2 teaspoon mustard seed
1 1/2 teaspoon turmeric
1 teaspoon dry mustard

Combine zucchini, onion, and garlic. Make brine of salt and water. Pour brine over vegetables and let stand 2 h and drain.

Bring vinegar, sugar, celery seed, mustard seed, turmeric and dry mustard to boil, pour over vegetables and let stand 1 h.

Bring mixture to boil and boil about 5 min. Pack into sterilized jars and seal. Makes 2 quarts.
