Homestead Basic Beans

2 c dried beans (about 1 pound)
12 c water
2 tsp garlic powder
2 tsp blackening seasoning
1 tsp ground cumin
2 tsp salt
1 tsp black pepper
1 1/2 tsp Old Bay seasoning

Rinse beans. Put 6 cups hot water in stockpot, heat to boil on high heat. Boil beans hard for 2 min, remove from heat. Let sit 1 hour. After 1 hour, drain beans, discarding water. Return beans to stockpot and add 6 cups hot water. Bring to a boil, then add garlic powder and the rest of the ingredients. Reduce heat and simmer, covered, until beans are done (about 3 hours).

Yields 4 cups cooked beans. Any leftover stock should be frozen and reserved for use in soups and sauces.
