2 Tbsp olive oil
4 c rolled oats
3 Tbsp honey
6 Tbsp brown sugar (packed)
3 Tbsp butter
1 tsp ground cinnamon
1 tsp ground cardamom
Sift oats well to remove fines that will char and ruin the granola.
Preheat a large cast-iron skillet over medium-high heat for 8 minutes. Add oil, allow to heat momentarily, then add oats. Cook with very frequent stirring until oats start to brown and crisp, about 7 minutes. Remove oats from heat, re-sift, and spread on a cookie sheet to cool.
Melt butter in the same skillet over heat set to a notch below medium. Stir in honey, then brown sugar, mixing to completely incorporate between additions. Add cinnamon and cardamom in portions, stirring to completely incorporate between additions. Cook 5 minutes with constant stirring. Add oats and cook 5 minutes more with constant stirring. Remove from heat and spread on a cookie sheet to cool.
Yields 2 quarts.
