These tasty, uniquely-flavored hard oatmeal bars are easy to make, travel very well, and keep for an amazingly long time. Two versions of the recipe are given, one for a 5x9 pan and one for a 9x9 pan.
1/2 c (1 1/4 c) self-rising flour
1/2 c (1 1/4 c) quick-cook oats
1/4 c (3/4 c) granulated sugar
2 Tbsp (5 Tbsp) packed brown sugar
1/4 c (3/4 c) butter
2 tsp (5 tsp) vanilla extract
1/2 tsp (1 tsp) anise seeds, crushed
1/2 tsp (1 tsp) ground cinnamon
1/4 tsp (1/2 tsp) ground cardamom seeds
1/2 tsp (1 tsp) fennel seeds, crushed
Preheat oven to 350 degrees F.
Combine all dry ingredients. Melt butter, mix thoroughly into dry ingredients. Add vanilla extract, mix thoroughly. Spread evenly in pan. Bake 20 minutes at 350 degrees F. Do not over-bake. Cut into bars.
