75 Thai chiles, finely chopped *or*
10 Bermuda peppers (or Jalapenos) plus 6 Mirasol peppers
(or Serranos or Cayennes), finely chopped
6 cloves garlic, minced
3 Tbsp fresh lime juice (about 1 lime)
1 Tbsp sugar
1 tsp chicken stock base
1 tsp olive oil
1/2 tsp salt
Chop peppers and mince garlic. Transfer to food processor; add other ingredients. Process on high speed to obtain desired consistency.
